One of my favorite summer activities is visiting community markets or seeing roadside fruit and vegetable stands. I always appreciate the hard work to make this food grow. The other part I love is the endless possibilities that fresh vegetables provide, and I love seeing new ones or new colors of old favorites.  

A unique new-looking vegetable that caught my eye was purple brussel sprouts! Could they be milder and more acceptable than the green ones?  

I could not resist.

Where do Purple Brussels sprouts come from?

Purple Brussels sprouts are grown from seeds; they have been around since the 1940s. They get their beautiful purple color from anthocyanins. 

Anthocyanins have more antioxidants and anti-inflammatory properties than their green counterparts. Research has shown that anthocyanins may lower blood pressure, reduce the risk of heart disease, protect and improve brain function, and slow or stop cancer.

*There is more Vitamin C in green and purple brussel sprouts than in an orange!

What do purple brussel sprouts taste like?

If you like green brussel sprouts, you will probably like purple brussel sprouts. Purple brussel sprouts are a little sweeter, less intense, and spicy than green brussel sprouts. Their flavor is earthy and slightly nutty. They cook faster since their leaves aren’t as tightly packed.

  • Fresh sprouts can be stored in the refrigerator for up to 5 days.
  • Blanch fresh brussel sprouts and store them in the freezer
  • Shred Brussel sprouts and use in salad, coleslaws
  • Shredded brussel sprouts will cook faster
  • Remove the outer shells of the brussels sprouts for the more tender insides.
  • The freshest brussel sprouts are straight from the stalk

  • It can be prepared the same as green brussel sprouts

Super Simple 3-ingredient Purple Brussel Sprout Recipe

Simple Purple Brussel Sprouts Recipes 

Makes 2 (1 cup) servings

2 cups (176 grams) of clean and trimmed (remove tough outer leaves) purple brussel sprouts 

2 tablespoons Olive Oil

3 tablespoons Balsamic Vinegar

  1. Preheat oven to 400 degrees
  2.  Clean and trim brussel sprouts.  Remove outer leaves.  Cut Brussel sprouts in half for quicker cooking time.
  3. Microwave Brussel sprouts in a microwave-safe bowl for 1 minute.
  4. Toss brussel sprouts coated with olive oil so it is as evenly distributed as possible. You can use a Ziploc bag or bowl
  5. Toss with balsamic vinaigrette 
  6. Place brussel sprouts on a baking dish
  7. Place in oven and bake for 15-25 minutes until desired doneness.
  8. Add salt and pepper if desired.

Crispy Parmesan Cheese Purple Brussel Sprouts

Makes 2 (1 cup) servings

2 cups (176 grams) of clean and trimmed (remove tough outer leaves) purple brussel sprouts 

2 tablespoons (28grams) olive oil

1/4 cup (25 grams) parmesan cheese 

  1.  Preheat oven to 400 degrees
  2. Coat trimmed brussels sprouts with olive oil
  3. Toss brussel sprouts coated with oil with parmesan cheese so it is as evenly distributed as possible. You can use a Ziploc bag or bowl
  4. Evenly distribute purple brussel sprouts on a baking pan
  5. Roast in oven for 10-15 minutes, depending on size of brussels sprouts. Larger ones may need more time
  6. Brussel sprouts will be down when the outer leaves are light brown and crispy.
